RECIPE 4 KIDS - Chocolate Avocado Pudding

Lots of kids I have introduced this recipe to have started off by saying that they hate avocado. It is usually a combination of the taste and the texture which puts them off. With this recipe however we change both and look to challenge kids' understanding of different foods and how they 'should be' eaten. In turn we hope to change the way kids view not only avocado but anything which they 'don't like', to possibly give it another try in a different way.

 

Important points to cover/conversations to have with kids before starting/during creating:

  • Hygiene and safety - a constant conversation to be had every time!

  • Cutting avocados - they are the biggest cause of injury in the kitchen!

  • Savoury foods rethought as sweet

  • Good fats - Lots of fats are bad fur us but avocados are full of good ones!

  • Tasting as you create and balancing flavours - This should be done slowly, bit by bit. You can add but it is hard to take away!

Shopping list (makes 2-4 puddings depending on size):

  • 1 ripe avocado

  • 1-3 tablespoons cocoa powder

  • 40ml-80ml coconut milk (other milks such as almond can be used too)

  • 2-4 tablespoons honey (or healthy sweetener of your choice)

  • 4 drops vanilla extract

  • Pinch of sea salt

Method

  1. Cut avocado on a chopping board (NEVER in your hand! - Fingers over the knife)

  2. Scoop out the stone with a spoon.

  3. Scoop out each half of avocado with a spoon (don't throw away the skin!)

  4. Cut avocado into a few chunks.

  5. Add avocado into a bowl with ALL the other ingredients (remember to start with a little first, you can always add more)

  6. Mash with a potato masher or a fork, until completely smooth.

  7. Taste - does it need more honey/cocoa/coconut milk/salt? Add as desired...

  • These can be eaten immediately, or chilled in the fridge before serving.

  • Cocoa nibs can be added for a bit of chunky texture. Sliced strawberries and some fresh mint on top is also a nice addition.

  • Serve puddings inside the avocado skins for fun!
