RECIPE 4 KIDS - Banana Pancakes

This is a great recipe to talk about processed flour and gluten with kids and how many people these days with gluten intolerances are just more sensitive versions of everyone else. Gluten is not great for the body, harsh on the gut and hard to digest. Flour again, is part of those meaningless, nutrition-less fillers we should try to replace with something more nutritious and in this case more delicious!

 

Important points to cover/conversations to have with kids before starting/during creating:

  • Hygiene and safety - a constant conversation to be had every time!

  • The evils of gluten

  • Rethinking traditional 'fillers'

  • Consistency and recipe discrepancies - Talking about the kind of consistency we are looking for and how different things come in different sizes and therefore we have to adapt recipe quantities where necessary.

Shopping list (makes 4-8 pancakes depending on size):

  • 2 ripe bananas (depending on size - I'm talking 'medium')

  • 1-2 eggs (depending on size - I'm talking 'medium')

Optional fillings / flavours:

  • Cinnamon

  • Cocoa powder

  • Vanilla extract

  • Crushed walnuts

  • Raisins

  • Blueberries

Method

  1. Peel the bananas and cut into a few chunks.

  2. Put the banana chunks in a bowl and mash with a potato masher or a fork, until smooth (a few small lumps are okay).

  3. Crack an egg into the bowl and beat well with a fork.

  4. Stir to combine the beaten egg and mashed banana.

  5. Mix in any powdered/liquid flavours you might be adding.

  6. The consistency should be a medium 'goop', not too runny, but it should 'pour'.

  7. Put a bit of butter/oil into a frying pan on a medium to high heat and pour in small sized pancakes (otherwise they won't flip easily).

  8. Evenly place any 'lumpy' fillings you are adding into the pancakes, soon after pouring them e.g. nuts, berries etc.

  9. When nicely browned on one side, flip to the other until the same colour is achieved.

  • These are great served with your favourite sliced fruit on the side, e.g. strawberries, kiwi etc.

  • Feel free to drizzle on a little honey / syrup / Nutella, but the banana makes these pancakes already naturally sweet!
